Indian restaurants have moved on since then and so has The Red Fort. We have completely redesigned the restaurant and its menu to bring it much closer to its namesake, Lal Quila, The Red Fort in Delhi.
The Red Fort's chef, Mohammed Rais, is the direct inheritor of a 300-year-old culinary tradition of Mughal court cooking. His distant ancestors were court cooks to the first Nawabs of Avadh and were the creators of the dum pukht style of cooking. These recipes and techniques have been passed down orally from generation to generation in an unbroken line.
